Broiled Oysters with Parmesan - Prep. Time 35 Minutes

24 Medium Willapa Oysters, 1 cup Cracker Crumbs, juice of 1 Lime, fresh grated Parmesan Cheese, Salt and Pepper, Rock Salt
Open Oysters in microwave. Just open, donīt cook. Discard top shells. Cut Oyster meat away from bottom shell. Maintain meat in bottom shell. Preheat oven broiler. Cover oven proof serving platter with Rock Salt. Arrange Oysters on platter. Sprinkle each Oyster with 1 teaspoon of Cracker Crumbs. Add 5 or 6 drops of Lime juice and Salt and Pepper on each Oyster. Sprinkle each Oyster with grated Parmesan Cheese. Put in broiler about 10 inches from heating element. Broil until golden brown, about 6 minutes.
