Baked Stuffed Cherrystones - Prep. Time 40 Minutes

3 lbs. Willapa Cherrystones, 1/2 cup Water, 1/3 cup chopped Onion, 1 (4 oz.) can chopped mushrooms, 3 tablespoons flour, 1/4 cup melted butter, 3/4 cup coarse Bread Crumbs, fresh Lime wedges, Parsley for garnish, Salt and fresh ground Black Pepper to taste
Heat Water to boiling. Add Cherrystones and steam for about 5 minutes until open. Just open, donīt cook. Remove Cherrystones, save juice. Remove meat from shells. Wash shells. Reserve. Chop meat. In saucepan, cook Onion and Mushrooms in Butter until Onion is transparent. Blend in Flour, juice from Cherrystones, Salt and Black Pepper. Preheat oven. Add chopped Cherrystones and cook until flour is thickened. Stir constantly. Grease Cherrystone shells with Butter. Fill with Cherrystone mixture. In small bowl, mix melted Butter and Bread Crumbs. Sprinkle over filling in Cherrystones. Bake in 400°F degree oven for 10 minutes or until browned. Donīt overcook. Garnish with sprigs of Parsley. Serve immediately with lime wedges.
