INGREDIENTS:

6 pounds Willapa Cherrystone Clams, 1/2 pound Salt Bacon/Pork chopped fine, 10 medium Potatoes chopped fine, 4 small Onions chopped fine, 1 quart whole Milk (or half & half), 3 tablespoons butter, Salt and fresh ground Black Pepper, Parsley for garnish.

PREPARATION:

Brown very small chopped Salt Bacon/Pork in Dutch Oven. Steam Clams with 3/4 cup water to open. Reserve water with Clam broth. Remove Clam meat and chop fine. Mix with chopped Potatoes and chopped Onions. Place all ingredients in Dutch Oven and cook on low heat for 1 hour. Add Milk and Butter. Salt and fresh ground Black Pepper to taste. Serve very hot with sprig of Parsley and 2 small open clams as garnish.

An even easier variation for preparation would be to put Clams, Potatoes, Onions together directly into food processor to chop. Cuts preparation time by 5 minutes.
